This is one of the easier Currys I like to cook on days when I have too much going on. This curry is known as Kadhai Chicken curry which is a northern Indian style curry. It is relatively easy and quick, and is served with basmati rice, and rotis.
Some of the ingredients may be hard to access, and may require you to go to an Indian grocery store. However, if you can access these ingredients, it’s far better than the substitutes that I offer. Either way, I hope you enjoy it just as much as I do.
Easy Delicious Chicken Curry (Kadhai Chicken)
A tomato based chicken curry.
Servings 4
Ingredients
- 1 whole chicken cut up or 2.2 lb of chicken breast
- 2 tbsp Cilantro/Coriander leaves
- 1 tsp Coriander seeds, pounded Or coriander powder
- 1 tsp Garam masala
- 4 tbsp Garlic pounded or shredded
- 3 tbsp Ginger chopped
- 4 Green chillies, slit
- 1 tsp dry fenugreek leaves I really highly recommend you have this, however, if you dont, just substitue 1 tbsp of fresh celery leaves
- ΒΌ cup oil
- 8 red chillies, whole, pounded
- Salt to taste
- 1 can San marzano tomatoes
Instructions
- Heat oil in a wok. Saute garlic until fragrant and golden brown. Add the pounded red chillies, pounded coriander seeds, and mix.
- You can either squeeze the san marzano tomatoes in, or you can chop them and put them in. Bring to a boil, and then add HALF of the coriander leaves, and all of the ginger, green chillies, and salt. Simmer for 5 minutes
- Add the chicken, and simmer, stirring occasionally till the gravy thicken, and chicken is tender
- Once the fat surfaces, stir in the garam masala, and the dry fenugreek leaves. Cook for two minutes
- Garnish with the rest of the coriander, and serve with basmati rice, and naan bread
